Classic French Mandoline
I use the classic French mandoline as my go to tool for removing corn from its cob, slicing vegetables and making fancy lacy potatoes.
There is a bit of a learning curve, but in the long run developing this skill will have its rewards. It will separate you from the less courageous, lol. For scalloped potatoes, this is the best tool. At about 1/4in thickness, the highest setting is perfect. The highest setting on most handheld mandolines makes too thin of a slice.
